Ingredients

  • 12 large Legacy Farms eggs

  • ½ cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 2 tablespoons dill relish, well drained

  • 2 tablespoons finely chopped green onion

  • 1 teaspoon Worcestershire sauce

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and freshly ground black pepper, to taste

  • For some extra kick, add a teaspoon of hot sauce or a pinch of cayenne pepper.

Instructions

  1. Cook the eggs: Place eggs in a saucepan and cover with cold water. Bring to a boil. Cover, remove from heat, and let sit for 11–12 minutes.

  2. Cool: Transfer eggs immediately to an ice bath and chill for at least 10 minutes. Peel carefully.

  3. Prepare the filling: Slice eggs in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks until very smooth.

  4. Add mayonnaise, Dijon mustard, dill relish, green onion, Worcestershire sauce, garlic powder, and smoked paprika. Mix until smooth and creamy.

  5. Taste and adjust: Add salt and pepper as needed. For a little more tang, add another small spoonful of Dijon.

  6. Fill the eggs: Spoon or pipe the filling generously into the egg-white halves.

  7. Garnish: Finish with a very light dusting of smoked paprika and a few finely sliced green onion tops.

For the most appealing presentation, pipe the filling using a star tip rather than spooning it in. Keep the smoked paprika garnish light—it gives the eggs a beautiful finished look without overpowering the flavor.

Make-Ahead: Prepare up to 1 day ahead. Keep refrigerated in a covered container and add the final garnish shortly before serving.
